Top local chef Kim Brennan unveiled as group exec chef for Fiveight venues, including Cooee and Indigo Oscar

The billionaire Forrest family’s private company Fiveight has announced top local culinary maestro Kim Brennan as group executive chef of its venues, which include Cooee, COPIA and Indigo Oscar. Brennan, who served as executive chef at State Buildings and COMO The Treasury in the city for close to a decade up to August 2024, will also oversee the group’s hotels, notably Cape Lodge in the South West. The chef has already made a splash as executive chef at Cooee, where he paired duck and pinot, and worked alongside recently appointed head chef Daniel Arthur. His current winter dish is a risotto of pearl barley with slow-cooked duck ragu and Manjimup truffle available every Thursday and complemented with an extensive selection of pinot wines by the glass. Brennan, who shepherded Wildflower, POST, Long Chim and Petition during his tenure at State Buildings, plans to usher in a new era across Fiveight’s businesses. The chef grew up in the South West before landing roles in kitchens spanning Bunbury, London, Fiji and Sydney before returning home to take on the executive chef gig at State Buildings and COMO The Treasury in mid-2015.
