Sydney Cove Oyster Bar’s underground jazz club a night to remember

Since moving to Broome from its No.1 Circular Quay home last year, Sydney Cove Oyster Bar has cemented its position at the top of the Broome fine dining scene, and its underground jazz club proves exactly why. Featuring renowned jazz outfit The Straight Jackets — headlined by Jaime Jacket — the evening of glitz and pearl glamour offered guests a delicate seafood themed four-course degustation to accompany the entertainment. It was atmosphere at its finest. Waiters and waitresses dressed for the occasion, there was a cocktail menu reminiscent of the prohibition era and even a red velvet fainting couch to top it off. For the first course, freshly shucked South Australian Coffin Bay pacific oysters were on the menu (as if you’d expect anything less from an oyster bar) finished with finger lime pearls. As you can expect from Coffin Bay oysters — which are sometimes left to grow for up to seven years — a delicate sweet and salty taste left me yearning for more. I’m not a big fan of fondue, or witlof for that matter, but the combination served with a few refreshing slices of pear made for a perfectly balanced dish I’d gladly eat again. The main was threadfin salmon en papillote with mussels, Yarra Valley caviar, prosecco, broccolini, cherry tomatoes and truffle butter. Although not the most photogenic of dishes, this was the highlight of the evening by a mile. The salmon was perfectly cooked, and the sizeable portion meant by the time we got the fourth and final plate — a chocolate mousse with macadamia biscotti — I was well and truly satisfied. After a full course meal I sometimes shiver at the thought of a sickly sweet desert, but the first mouthful of chocolate mousse dispelled my worries. Opulent but not ostentatious, sweet but not sickly, the mousse was a perfect end to the evening. Sydney Cove Oyster Bar will host only two more Underground Jazz Super Club evenings, on July 12 and July 19, so get your tickets or risk missing out.
